A chimney burner produces a tight upward flame ideal for stir-frying and achieving wok hei. A duckbill burner spreads heat wider, better suited for stockpots, broths, and soups. Most Asian restaurant kitchens run at least one of each.

Standard commercial cooktops produce around 28 MJ/h per burner, which is not enough for proper wok cooking. A commercial wok burner should output at least 90 MJ/h. High-volume kitchens typically need 120 to 180 MJ/h to maintain heat recovery through a continuous service.

LPG vs Natural Gas
